Do I get access to the raw experiments data that was tracked?

Yes, if you host Matomo (Piwik) yourself you get access to all data that is stored in your MySQL database. The tracked data is stored in a table called matomo_log_abtesting, the A/B test configurations are stored in a table matomo_experiments.
